Sundays are my day to cook lunch for the week. I make a large batch of something and portion it out. It helps me eat healthy in a quick and inexpensive way. After my dear friend Emma came to SF for my birthday and New Year's I have been detoxing. We had a blast but perhaps next time we will leave some cheese and oysters for other people in the Bay Area to enjoy. So this is my last week of a month of no meat or cheese. I've honestly felt much better with the increased veggies and will probably stick with it after I eat a pizza and cheeseburger. Hopefully not at the same time.
Today I'm making Easy Chickpea Curry from Martha Stewart's Everyday Food (with some amendments.)
Here's how to do it:
1. Cook one cup of long-grain white rice according to package or with your rice cooker. (I just bought one for like $30 on Amazon and it's has changed my life.)
2. Meanwhile in a large pot heat a splash of olive oil. Throw in one white onion roughly diced, 3 minced garlic cloves, 4 teaspoons curry powder (or four generous shakes if you're like me and aren't into measuring,) and 1 tablespoon minced fresh ginger. (I just grated one quarter sized chunk. I feel like you can use less ginger if you grate it rather than mince but that could just be me.)
3. Add two cans chick peas. (I always rinse anything I use in a can to get rid of as much sodium as possible. It probably doesn't do anything but helps me sleep better.) Now you are supposed to add some roasted tomatoes and cauliflower from another recipe. I just threw in some frozen cauliflower and a small can of diced roasted tomatoes. (I'm sure it would taste better if you roasted your own but I found this shortcut didn't sacrifice any flavor and saved me about 45 minutes. Plus fresh tomatoes look disgusting right now.) Bring to boil then lower heat and simmer while covered until everything tastes tender.
4. Add 2 1/2 cups baby spinach (about half a package) and handful of torn fresh cilantro until wilted. Serve over rice.
It's supposed to make 4 servings but I always seem to squeeze out a 5th. Portion off in tupperware and you're done for the week - Enjoy!
