Sunday Supper - Chicken Salad with Avocado Dressing


For lunch I've been craving a chicken salad sandwich and found this great recipe that uses avocado instead of mayo. Note - the picture does not do this sammie justice. It was delicious but does not look so hot on a paper plate at work. Also it's a lot prettier on some rustic sour dough slices but I used those half bun things that make everything look like play-doh. You'll just have to trust me on this one.

1. In a medium bowl combine 2 shredded, boneless, skinless chicken breasts, 2 celery stalks finely chopped, 1 large shallot finely chopped, and 1 avocado diced small.

2. Using an immersion blender combine 2 avocados, 1 cup buttermilk, 1 scallion, and a handful of mint and parsley. Season with 2 lemons, salt and pepper.

3. Add 1 cup of the avocado dressing to the bowl with the chicken. Mix well. Top your favorite sandwich bread. Use leftover dressing for salads or as a sauce for chicken or fish.
